Detroit Style Pizza
Sometimes its raining and can't use the pizza oven. Next best thing is a nice Detroit style pizza.

Makes 2 8x10 or 1 10x14
Ingredients
dough
2 1/2 cups (300g) King Arthur® Bread Flour
1 1/2 teaspoons (5g) SAF Red Instant® Yeast
1 tablespoon (7g) King Arthur® Pizza Dough Flavor, optional; for added flavor
1 teaspoon (3g) Diamond Crystal® Kosher Salt
1 cup (227g) lukewarm water, 100℉
California Olive Ranch® Extra Virgin Olive Oil, for greasing the pan
pepperoni mushroom toppings - 8x10
8 ounces pepperoni, quartered into 1” pieces
1/2 cup red onion, thinly sliced
1/2 cup cremini mushrooms, thinly sliced
3 ounces Kraft® Mozzarella Cheese, cut into 1/2" cubes
3 ounces Kraft® Sharp Cheddar Cheese, cut into 1/2" cubes
Muir Glen® Pizza Sauce
chicken beer cheese toppings - 8x10
1 grilled chicken breast, diced into 1/4" cubes or strips
2 Stoysich® Thick Cut Bacon, cut into 1/4" strips
3 ounces Kraft® Mozzarella Cheese, cut into 1/2" cubes
3 ounces Kraft® Sharp Cheddar Cheese, cut into 1/2" cubes
fancy-velveeta-sauce
1 green scallion, thinly sliced, for garnish
hamburger with black and green olives - 8x10
1/2 lb Stoysich® Hamburger, cooked
1/2 cup Hy-Vee® Large Pitted Ripe Olives, sliced
1/2 cup Mezzetta® Super Colossal Spanish Queen Olives, sliced
6 ounces Kraft® Mozzarella Cheese, cut into 1/2" cubes

Directions
to make the dough
— START DOUGH 4 HOURS BEFORE EATING TIME —
Weigh your flour; Mix and knead all the dough ingredients in a stand mixer using the dough hook until a shaggy dough forms.
Cover the dough, allow it to rest for 10 minutes, then knead it again until it becomes smooth and elastic.
Form the dough into a ball, place it into a lightly-greased bowl, cover, and allow to rest until doubled, about 2 hours.
Drizzle 1 tablespoon of olive oil into a Detroit-style pizza pan. Gently stretch the dough into the edges and corners of the pan until it starts to shrink back and won’t stretch any further. Cover the pan, and allow the dough to rest and relax for 15 to 20 minutes before stretching it again. Repeat the rest one more time, if necessary, until the dough fills the bottom of the pan.
Cover the dough and allow it to rest for 30 to 45 minutes. In the meantime, position a rack at the lowest position of the oven, and preheat the oven to 500°F.
to make a pepperoni mushroom pizza
Top the dough with an even layer of pepperoni. Add the mushroom and onion, followed by the cubed cheeses making sure to spread them to the edges of the pan.
Dollop the sauce over the surface of the pizza.
to make a chicken beer cheese pizza
Ahead of time, grill the chicken and bacon. Let cool and cut into strips and set aside.
Top the dough with an even layer of chicken and bacon, followed by the cubed cheeses making sure to spread them to the edges of the pan.
to make a hamburger olive pizza
Top the dough with an even layer of seasoned hamburger. Add both the black and green olives, followed by the cubed mozzarella making sure to spread them to the edges of the pan.
Dollop the sauce over the surface of the pizza.
bake the pizzas
Transfer the pizzas to the bottom rack of the oven, and bake until the cheese is bubbly and the edges have turned nearly black, about 12 to 15 minutes.
Make the fancy-velveeta-sauce while the pizzas are baking. Keep warm until ready.
Remove the pizza from the oven, run a spatula around the edges to loosen it from the pan, and let it rest for 10 minutes, or until you can hand. Cut the 8 x 10 pizzas into 4 pieces.
When the chicken and bacon pizza is sliced, drizzle the cheese sauce over the pizza and garnish with green scallion.
