Yellow Rice
This is amazing and different way to enjoy rice. It is so aromatic and flavorful from the saffron and turmeric. Fantastic base for your Shawarma Rice Bowl.
Makes 4 servings
Ingredients
2 servings Pride of India® Basmati Rice using the Zojirushi® measuring cup
1 cup vegetable broth
1/4 cup yellow onion. finely minced
1 tablespoon Kerrygold® Unsalted Butter, melted
1 bay leaf
1/2 teaspoon RealSalt® Garlic Salt
1/4 teaspoon turmeric powder
pinch saffron threads in 1/4 cup hot water
Directions
Add the pinch or about 1/4 teaspoon of saffron threads to a cup and the hot water. Set aside and let sit for about 15 minutes.
Melt the butter in the microwave for about 15 to 20 seconds on a medium power.
Rinse and drain the basmati rice 3 times in the Zojirushi bowl. Dry off the bowl thoroughly with a towel and return it to the cooker.
In the cooking bowl add the melted butter, onion, garlic salt, turmeric, saffron and its soaking water and bay leaf in the pot and mix well. Add enough vegetable broth to reach the 2 cups white rice mark on the Zojirushi cooking bowl. Mix well again, then close the lid and set the rice cooker to cook on the white rice mode; press start.
When done, fluff the rice. Keep warm until ready to serve.
Notes
- If the 1 cup vegetable broth does not reach the mark on the bowl, add water to make the mark.
- We use a Zojirushi® Rice Cooker and Warmer, Model: Zojirushi NP-GBC05XT. It is a 3 cup rice cooker.
- If you do not have saffron, add another 1/4 teaspoon turmeric powder to total 1/2 teaspoon turmeric powder.
