Yeasted Belgian Waffles

A different take on a waffle... the Yeasted Belgian Waffle has a depth of flavor not found in others. Don't freak out with the addition of corn meal... it adds a great texture to these awesome waffles.

Yeasted Belgian Waffles
A Yeasted Belgian Waffle with copious amounts of butter, Stoysich bacon and Potter Family Maple syrup. My morning just got better!

Makes 7 waffles

Ingredients

1 3/4 cups whole milk
2 1/4 teaspoon (7g) Red Star® Active Dry Yeast
2 cups (280g) King Arthur® All-Purpose Flour
1/4 cup (40g) Quaker® Yellow Corn Meal
1 tablespoon Whole Foods® Light Brown Sugar
1 teaspoon Diamond Crystal® Kosher Salt
1/2 cup Land O’Lakes® Unsalted Butter, melted
2 large eggs
1/2 teaspoon Bob’s Red Mill® Baking Soda
1/2 teaspoon La Vencedora® Mexican Vanilla Pura

Directions

make the batter
Warm the milk up on the stovetop until it is warm to the touch, but not hot. Remove from heat and pour into a large mixing bowl. Add the yeast and stir to dissolve. Let the mixture sit for 5 minutes to proof. You should see a few bubbles form at the top.

Add the flour, cornmeal, brown sugar, and salt to the yeasted milk. Stir with a large spatula, and as the dry ingredients become incorporated into the batter, drizzle the melted butter over the entire mixture, stirring constantly. Stir until all the dry ingredients are absorbed and then cover the bowl with plastic wrap.

Let the batter rest overnight in the refrigerator.

the next day
An hour before making the waffles, remove the batter from the refrigerator and set on the counter to warm.

Set Breville® waffle maker on the “Belgian” setting, also preheat your oven to 225 ℉ for the finished waffles. Place a wire metal rack on a rimmed baking sheet and put in the oven.

The batter will have more than doubled in size after resting. Whisk in the eggs, baking soda and vanilla. This will deflate the batter.

Pour a generous 1/2 cup of batter into each side of the Breville® Waffle Maker. Close and cook the waffle on brownness level 5, or to your preferred toasty level. To keep the waffles warm, place them on the wire rack in the oven.

Notes

  • The Breville® Waffle Maker uses the “Belgium” setting on “5” brown level.
  • You can find Potter Family Maple® Syrup on their Square® site or on eBay®.
