Tzatziki Sauce
Might not be traditional, but it is tasty. Good for a gyro or a dip for some Greek Lemon Potatoes.

Makes 1 cup
Ingredients
1 cup Fage® 5% Greek Yogurt
1 cup english cucumber, partially peeled and grated
1 teaspoon Diamond Crystal® Kosher Salt, divided
1/2 teaspoon RealSalt® Garlic Salt
1/2 teaspoon Heinz® Distilled White Vinegar
1/2 teaspoon pickle juice
1 teaspoon lemon juice
2 tablespoon California Olive Ranch® Extra Virgin Olive Oil
1 tablespoon fresh dill, chopped
salt and white pepper, to taste
Directions
Prep the cucumber, by removing some of the skin using a peeler. Grate the cucumber, using a hand grater. Toss with ~1/2 tsp salt. Transfer to cheesecloth in a strainer over a deep bowl or sink to drain. After a few minutes or after you have gotten the other ingredients mixed together, squeeze out any excess liquid. Set aside briefly, or if ready add to the other ingredients and mix.
While the cucumber is resting, get a large bowl and add the yogurt. Stir in the olive oil, white vinegar and pickle juice. Also add the lemon juice and garlic. Stir until all ingredients are combined.
Add the dill and stir to incorporate. Taste for seasoning, adding any additional amounts to desired taste.
At this point, add the resting and strained cucumber. Combine well. Do a final taste test and if all is good, cover with plastic wrap and put in the refrigerator for at least 2 hours. The longer the better.
When ready to serve, stir the tzatziki sauce to refresh, transfer to a serving bowl if desired, and drizzle a generous amount of extra virgin olive oil on top.
Add a side of warm pita bread and your favorite sliced vegetables.
Notes
- You can substitute a regular cucumber, but make sure you scrape the seeds out before grating it.
- You can use 2% fat greek yogurt. But do not use fat free.
- I used a garlic salt vs. real garlic, because I find real garlic is a little too powerful sometimes. But you can substitute 2 minced garlic cloves instead of the garlic salt.
