Simple Tuna Melt
Light on mayo, but full on flavor. I often vary the ingredients based on what I have, but as a simple base this works.

Makes 2 sandwiches
Ingredients
tuna mixture
2 tablespoons green onion, both white and greens, minced
2 tablespoons celery, minced
3 tablespoons pickle, minced
1 teaspoon lemon juice
1 teaspoon French's® Classic Yellow Mustard
3 tablespoons Hellmann’s® Mayonnaise
1 (5-ounce) can StarKist® Solid White Albacore Tuna, well drained
1 tablespoon parsley, finely chopped
1 tablespoon tarragon, finely chopped
1/4 teaspoon RealSalt® Garlic Salt
1/4 teaspoon RealSalt® Onion Salt
dash Frank’s® Original Hot Sauce, to taste
Bourbon Barrel Foods® Smoked Salt and Pepper, to taste

2 Hamburger Potato Buns, sliced in half
2 slices white american cheese
Directions
make the tuna mixture
Mix all ingredients in a medium sized bowl. Add the drained tuna, mixing with a fork or spoon to break up the flakes. Mix until you get a nice course, well blended mixture.
On a parchment lined 1/4 sheet pan place the halved buns. On one side of the bun place a slice of american cheese, and on the other spread half of the tuna mixture. Repeat with the other sandwich.
toast the sandwiches
Place the sheet pan in the toaster oven or regular oven at 325 ℉ toast/bake the sandwiches for about 7 - 10 minutes or until the cheese has melted and just turning brown.
When the sandwiches are done, remove the sheet pan and plate with some chips and pickle.
Notes
- Substitute bread slices for the hamburger buns if not available.
- I use a toaster oven to make this a simple tuna melt with a bun vs using a griddle. Use a griddle if substituting slices of toast for the bun or keep it simple and just toast/bake like you would with the buns.
- I use tarragon if it is available in the garden, but if unavailable I leave out. I usually always have fresh parsley in the garden or refrigerator if out of season.
- Substitute any tuna you have available. I like albacore, but a regular can of tuna works just as good.
