We all know the friendly helping hand of the mascot from america’s favorite one pan meal. This is my version of the classic dish inspired by watching the great show Struggle Meals and Frankie Celenza's version.

15 Bean Soup — What a classic... cold winters day and a bowl of 15 Bean Soup. Heck... warm summer day and a bowl of 15 Bean Soup. Always tastes great!

This makes a lot of soup... but it freezes really well. The frozen 15 Bean Soup is great for when you want a quick meal or are busy and don't want to cook. Thaw, reheat and serve. Done.

Slow Cooker Thai Pork with Peanut Sauce — Make it as spicy as you wish with some Sriracha, but don't forget the limes and crushed peanuts.

Once we were traveling for a dog show and staying at a Airbnb. We were looking for a one pot, easy meal and BBC Food delivered. We still make this risotto or variations of it today... it's always elegantly simple.

The holidays at the in-laws always meant I would get Joe's prime rib. Sadly Joe is no longer here, but his legacy and tradition lives on... Jimidiah says thanks Joe!

Horseradish Sauce — A little of this Horseradish Sauce on the side of a Rib Roast for dipping or a little drizzle over a leftover Rib Roast sandwich is what I assume heaven is like.

Spaghetti Squash — Perfectly roasted Spaghetti Squash waiting for a red sauce... hmmm, I've never made with a white sauce. Idea for next time.

This fruit is truly amazing... with a pasta like texture and feel. In the fall and winter it is a delicious and unique change from pasta. Buy a few and keep in a cool and dark place... they will keep for months.
