Guacamole

Fresh Guacamole is surprisingly easy to make and always better then store bought.

Ingredients

2 ripe avocados
1 tablespoon lime juice
3 tablespoons red onion, minced
1/2 ripe tomato, chopped
1 - 2 serrano chilis, stems and seeds removed, finely minced
2 tablespoons cilantro, finely chopped
Diamond Crystal® Kosher Salt, to taste

Directions

Cut the avocados in half and remove the pit. Scoop out the flesh with a spoon and place in a bowl. Using a fork, roughly mash the avocado.

Sprinkle the avocado with a little salt and lime juice. Then add the chopped onion, cilantro, and tomato. Start adding the chili, with a half of one chili pepper and adding more to the guacamole to your desired degree of heat.

Continue mixing and mashing the avocado until desired consistency is reached. Tasting the guacamole for seasoning and adjusting as needed.

Serve immediately with tortilla chips.

Notes

  • Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste.
  • If making a few hours ahead, place plastic wrap on the surface of the guacamole and press down to cover it to prevent air reaching it.
  • Can substitute diced cherry tomatoes for a ripe tomato.
