Frozen Mixed Vegetables
Keep some emergency vegetables in the freezer and have them for a side when fresh is not available.
Makes 2 servings
Ingredients
~8 oz mixed frozen vegetables
1 tablespoon California Olive Ranch® Avocado Blend
RealSalt® Lemon Pepper, to taste
Directions
Preheat the toaster oven to 425℉ on convection. Line a baking sheet with parchment paper.
In a bowl, toss vegetables with olive oil and lemon pepper, until coated.
Pour frozen vegetables onto parchment paper (be sure you do this straight from the freezer, do not thaw the vegetables first).
Roast the frozen vegetables for around 30 minutes, until the edges begin to brown.
Notes
- I use a mix of frozen vegetables with broccoli, cauliflower, carrots and zucchini.
- The avocado blend oil I use is an avocado and olive oil blend.
