Creamy Clam Linguine
I also make a great summertime clam linguine with fresh tomato, but this is my second favorite and a good winter alternative.

Ingredients
1/2 pound linguine
3 cans (6.5 oz) Bar Harbor® Chopped Clams, drained (save juice)
1 medium shallot, chopped
2 tablespoon Kerrygold® Unsalted Butter
1 tablespoon California Olive Ranch® Extra Virgin Olive Oil
3 garlic cloves, minced
2 tablespoons King Arthur® All-Purpose Flour
1 cup seafood stock
2 tablespoons white wine
1/2 cup clam juice (from drained clams)
1/2 cup heavy whipping cream
1/2 teaspoon dried oregano
1/2 teaspoon Old Bay® Seasoning
1/2 teaspoon RealSalt® Garlic Pepper Seasoning
1/4 teaspoon crushed red pepper flakes
~1/2 cup parmesan cheese, grated
garnish
~2 tablespoons parsley, chopped
Couple dashes Old Bay® Hot Sauce
smoked salt and pepper, to taste
Directions
Start the water for the linguine. Combine together the clam juice, seafood stock and heavy whipping cream into a measuring cup.
Meanwhile, in a large saucepan, add the butter and oil, and cook the shallot until translucent. Add garlic and white wine, saute and reduce for 1 - 2 minutes longer. Add the seasonings and mix in for ~1 minute. Stir in flour until blended, then gradually add the stock, clam juice and cream mixture while whisking. Bring to a boil and cook and stir for ~2 minutes or until thickened. Add additional clam juice or stock to reach desired consistency.
Add the clams and cook and stir for ~3 minutes or until heated through.
When the linguine is finished cooking, drain pasta, while reserving about a cup of the pasta water. Add pasta to the sauce, then add the parmesan cheese, toss to coat adding any pasta water to reach the desired consistency.
Salt and pepper to taste, plate and garnish with the parsley and parmesan cheese. Drizzle a little olive oil over the finished dish.
Notes
- If Old Bay® Hot Sauce is not available, I like a little Frank’s® Original Hot Sauce anytime. But any favorite hot sauce will be fine.
