Crab Stuffed Halibut

Crab Stuffed Halibut

Makes 2 large stuffed filets

Ingredients

1 lb fresh halibut, cut into 2 filets, skinless
1 tablespoon California Olive Ranch® Extra Virgin Olive Oil
sea salt and black pepper, to taste

6 oz lump crab meat
1/4 cup Hellmann’s® Mayonnaise
1/2 teaspoon Gray Poupon® Dijon Mustard
1/2 tablespoon lemon juice
1/2 teaspoon Old Bay® Seasoning
1 teaspoon RealSalt® Garlic Salt
1/4 cup green onion, chopped
1/3 cup Progresso® Italian Style Panko Bread Crumbs
parmesan cream sauce
2 tablespoons Kerrygold® Unsalted Butter
1 tablespoon King Arthur® All-Purpose Flour
1 tablespoon garlic, finely minced
1 teaspoon RealSalt® Seasoning Salt
2 oz lump crab meat
1 cup heavy cream
1/3 cup parmesan cheese, grated

Directions

Preheat the oven to 375℉.

In a small or medium bowl, add mayo, dijon mustard, lemon juice, Old Bay, black pepper and garlic powder. Whisk together, then stir in bread crumbs. Stir in crab meat, shrimp and green onions. Mix until everything is thoroughly combined.

Cut a slit in the top of each halibut filet from one end to the other. Oil, salt and pepper each filet. Using a spoon, stuffed crab mixture into each piece of halibut.

Line a baking sheet with parchment paper. Spray with non-stick spray, and add each piece of halibut to the baking sheet. Bake in a preheated oven for 20 minutes.

While the halibut bakes prepare the parmesan cream sauce. In a small pan, heat butter over medium low heat. When butter is melted, whisk flour, and whisk until a creamy mixture. Add the garlic and cook for an additional 1 minute.

Slowly whisk in cream. Bring to a simmer, then add season salt. Simmer for 5 minutes, whisking occasionally to keep from thickening too much. If the mixture is too thick, add more cream until desired consistency is reached.

Stir in parmesan cheese, and whisk until melted. Taste and add more salt or seasoning if needed. Keep warm until the fish is baked.

After the 15 minute mark, turn the oven up to broil. Broil halibut, for 1 minute, or until brown on top.

Remove from the oven and serve topped with parmesan cream sauce and garnish with chive and a sprinkle of Old Bay.

Notes

  • Halibut can be substituted with Artic Char, Salmon or cod.
  • Served with mashed potatoes and asparagus.
  • 01/17/24 - For larger halibut filets, they can be quartered and the recipe will serve 4 with sides of mashed potatoes and asparagus.
