Buffalo Chicken Grillers

This is a nice alternative to the regular chicken wings. Diced up... it makes a surprisingly tasty omelette the next morning.

Buffalo Chicken Grillers

Makes 2 grillers

Ingredients

2 boneless skinless chicken breasts
~12 slices Farmland® Hickory Smoked Bacon, Classic Cut
buffalo chicken stuffing
~1/4 cup Kerrygold® Aged Irish Cheddar Cheese
2 ounces Philadelphia® Cream Cheese, softened
2 tablespoons celery, finely diced
2 tablespoons carrots, finely diced
2 tablespoons scallion, finely diced
~1/8 cup Frank’s® Original Hot Sauce
1/4 teaspoon RealSalt® Seasoning Salt

~1/4 cup Frank’s® Original Hot Sauce
2 tablespoons Kerrygold® Unsalted Butter

Homemade Blue Cheese Dressing

Directions

In a medium size bowl combine cheddar, cream cheese, celery, carrots, scallion, hot sauce and season salt. Mix. Taste and adjust the spicy level or ingredients to taste.

Using a sharp knife, cut a horizontal pocket on the thicker side of the chicken breast, but don't cut all the way through the chicken. Open chicken breast and put a sheet of plastic wrap over butterflied chicken and flatten with meat tenderizer or heavy pan. Put half of the filling on each chicken breast.

Fold chicken and wrap with 4 - 6 slices of bacon and secure with toothpicks or cooking twine.

Grill chicken breasts on the indirect side of the grill until the internal temperature of the chicken reaches 160℉. Remove from the grill and let rest.

finishing sauce directions
In a small saucepan over medium heat or on the grill. Combine the hot sauce and butter and stir until butter melted. Do not let it boil or the ingredients will separate. Just slowly melt to combine, while mixing.

Notes

  • To plate, pour the sauce over the chicken breasts and drizzle with blue cheese dressing.
  • You do not need to use the finest quality bacon to wrap the grillers. Thinner bacon is actually easier to wrap the griller.
