Beer Cheese Sauce
A more complicated cheese sauce... but a little more flavorful then our quick fancy velveeta cheese sauce.
Makes 2 cups
Ingredients
2 tablespoons Kerrygold® Unsalted Butter
3 tablespoons King Arthur® All-Purpose Flour
3/4 cup half-and-half
2/3 cup Paulaner® Hefe-Weizen
1 teaspoon Pointershire Sauce (worcestershire sauce)
1 teaspoon Gray Poupon® Dijon Mustard
1/2 teaspoon RealSalt® Garlic Salt
1/2 teaspoon RealSalt® Seasoning Salt
1/4 teaspoon Bourbon Barrel Foods® Smoked Paprika
10 ounces cheese *see notes, shredded
few dashes of Frank’s® Original Hot Sauce, to taste
smoked salt, to taste
Directions
First, make sure your cheeses are freshly-shredded and ready to go; Set aside.
Melt the butter in a medium saucepan over medium heat. Add the flour and whisk together until a thick and clumpy paste forms, about 1 minute.
In a slow and steady stream, whisk in the milk. After it’s all added, continue whisking until it slightly thickens, about 3 minutes.
Lower the heat to low and one at a time, whisk in the remaining ingredients. Taste for salt and add the hot sauce. When the cheese is just melted and incorporated it is finished. Try not to cook the sauce too long as it might start to get grainy and get over cooked.
Remove the cheese dip from heat and pour into a serving dish. Sprinkle with extra cheese, if desired. The sauce will be thin right off the stove, but will begin to thicken after a few minutes. It’s delicious warm or room temperature.
Notes
- The cheese can be a mixture of any cheese available. I like 1 block (8 oz) Kraft® Sharp Cheddar Cheese and 2 oz of another cheese like Kerrygold® Aged Irish Cheddar Cheese or Kraft® Pepper Jack Cheese.
- Whole milk or heavy cream can be substituted for the half and half.
- Another beer that would work well is Avery Brewing® White Rascal or any kind of wheat beer.
