Beef Bean Chili

On a cold day... or really anytime, a bowl of Beef Bean Chili will make you feel better. Fritos or cornbread it is up to you for your carbohydrate.

Beef Bean Chili
A nice serving of Beef Bean Chili with some Fritos® Original Corn Chips for a side.

Ingredients

1 pound Stoysich® Ground Beef
2 slices Stoysich® Bacon, thick cut and coarsely chopped
1 poblano, roasted and chopped
1/4 cup sweet peppers, chopped
1/2 cup yellow onion, chopped
1 tablespoon garlic, minced
1 teaspoon Pontershire Sauce (worcestershire sauce)
1 tablespoon Muir Glen® Tomato Paste
1/2 teaspoon Wright’s® Hickory Liquid Smoke
1/2 teaspoon ground cumin
1/2 teaspoon Bourbon Barrel® Smoked Paprika
1/2 tablespoon chili powder
1/2 tablespoon dried oregano
1 (14.5 oz) can Muir Glen® Fire Roasted Diced Tomatoes, including liquid
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can Whole Foods® Bean Trio, drained and rinsed
1 can lager beer
Bourbon Barrel® Smoked Salt and Pepper, to taste
garnish
Straus® Sour Cream
Kerrygold® Aged Irish Cheddar Cheese, grated
scallion, chopped

Directions

Preheat oven to 400℉ for roasting the poblano.

Place the poblano on a sheet pan lined with parchment paper or aluminum foil, and drizzle with a light coat of neutral oil. Roast the pepper in a 400℉ oven. Turn the poblano ~15 minutes into roasting and cook until lightly charred, ~30 minutes in total cooking time. When finished, remove the skin and deseed the pepper. Chop the poblano into smaller pieces and set aside.

In a dutch oven add ground beef and brown, drain excess liquid/fat if needed and set cooked beef aside. Add sliced bacon to the dutch oven, cook until crispy, then remove and set aside. Keep the bacon fat in the dutch oven, then add in onions and cook for 5 minutes. Add garlic and cook until onions are translucent, ~2 minutes more. Add the tomato paste and seasonings, mix in and saute for another 2 minutes.

Add back in the dutch oven the ground beef and bacon. Add fire roasted tomatoes, black beans and bean trio mix. Reduce to a simmer and cook for about 20 minutes. If the chili is too thick add a small amount of beer to get desired consistency.

Add beer to chili to keep desired consistency.

Salt and pepper, and adjust any desired seasonings.

To garnish, put sour cream and grated cheddar cheese with a sprinkle of scallion on top.

Notes

  • Serve with cornbread or Fritos® Original Corn Chips.
  • Substitute 4 slices of regular bacon if a thick cut is not available.
  • The can of Bean Trio is purchased thru Whole Foods it contains a blend of kidney, pinto and black beans. If unavailable you can substitute with any canned bean of your choice.
